Executive Pastry Chef (Full-Time)
Exceptional service and cuisine are hallmarks of the Fairmont Hotels & Resorts dining experience. As Executive Pastry Chef of the Chateau Laurier, you will create amenities for heads of state, custom desserts for celebrities, shepherd the desserts for the most prestigious galas in the capital, and create memories for generations in afternoon tea. Your leadership, creativity and culinary skills will inspire your team to create out of the box, spectacular desserts that bring every meal to a memorable (and delectable) end. The Chateau Laurier’s Executive Pastry Chef sets the standard for the city, and as such must display intense curiosity with a passion for understanding current trends and pushing the boundaries of their craft.
Responsibilities:
Reporting to the Executive Chef, responsibilities and essential job functions include but are not limited to the following
Responsible for ensuring every employee is working effectively and efficiently improving employee morale and employee relations
Leading and managing the quality/quantity of items produced by the Pastry department, coordinating the production as it relates to banquet and restaurant functions
Supervising and managing unionized employees
Advocating sound financial/business decision making
Oversee all cooking operations, including methods of preparation, portion control, monitoring timeliness of food delivery and garnishing
Oversee the monitoring of weekly sales and adjusts prep production levels ensuring all food products are ordered to par levels and can make adjustments according to business volumes
Open and close work area at scheduled times, ensuring full preparation for operation/function
To lead and manage the quality of the Pastry department, coordinate the production as it relates to banquet and restaurant functions

Supervise preparation, quality and quantity of all baked items
Develop new dessert, pastry and bread products
Maintaining payroll costs and productivity within budgeted guidelines
To assist in the recruitment and training of all new Pastry Cooks
Balance operational, administrative and Colleague needs
Follow outlet policies, procedures and service standards
Follow all safety and sanitation policies when handling food and beverage
Other duties as assigned
Qualifications and Requirements:
Extensive leadership experience in a Pastry department required
Diploma/Certification in a Culinary discipline
Strong working knowledge of chocolate skills
Computer skills required
Ability and understanding of food costing
Strong interpersonal and problem solving abilities
Highly responsible & reliable
Ability to work well under pressure in a fast paced environment
Ability to work cohesively as part of a team
Ability to focus attention on guest needs, remaining calm and courteous at all times
Organizational Skills
Current Kitchen hygiene and food safety certification
Baking and pastry in all areas
Comply with all departmental policies
Division operations
Microsoft Word, Teams and Excel
Hotel amenities any special events
Knowledge of Allergens and substitutions
Plan schedule on a 1 week basis and to review on a daily basis with Executive Sous Chef overtime, and holiday requirements and absenteeism
Checks employee’s work areas, clothing and appearance, and safe working practice
Attends or holds daily briefing for upcoming functions
Covers administrative work, ensures accuracy of HACCP logs
Checks on food presentation, standards and adequate set-up for each meal period
Supervises pastry preparation shift operations
