Position – Assistant Chef
Hockley Valley Resort in Mono, ON is seeking an Assistant Chef for its facilities to assist and coordinate the Al la Carte production and plating with the Chef de Cuisine and Restaurant Chef.
Compensation starting at $60,000.00. To be negotiated based on experience.
Assistant Chef Job Responsibilities and Duties include
- Brief the Restaurant kitchen staff daily about the upcoming and current business levels.
- Supervise and coordinate all activities of cooks and kitchen staff who are engaged in food preparation.
- Establish the day’s priorities and assign production and preparation tasks for the kitchen staff/chefs to execute.
- Effectively communicate both verbally and in writing to provide clear direction to staff.
- Assist in determining the minimum and maximum stocks of all food, cooking supplies and equipment.
- Assist the Restaurant Chef in menu development and execution.
- Maintain inventory control procedures and ensure that the kitchen is prepared for the following day’s work.
- Responsible for managing all day-to-day operations of the kitchen, maintaining all equipment in a proper operational condition and overseeing the regular cleaning of all equipment used in the kitchen.
- Ensure that kitchen work areas are stocked with specified tools, supplies and equipment to meet the hotels operating and business demand and all staff prepare menu items following recipes in accordance with the hotels operating standards.
- Communicate kitchen needs with purchasing and storeroom personnel.
- Review sales and food cost with the Restaurant Chef to ensure that the kitchen is meeting budgeted costs.
- Monitor the performance of kitchen staff and ensure all procedures are completed to the department standards.
- Ensure and maintain the productivity level of all cooks and supporting staffs.
- Assist Restaurant Chef with menu planning and food purchasing.
- Participate in kitchen employees progress and discipline procedures as well as in training staff on menu items including ingredients, preparation methods and unique tastes.
- Plan and manage food quantities and plating requirements.
- Maintain food preparation handling and correct storage standards.
- Review staffing levels to ensure that guest service, operational needs and financial objectives are met.
- Ensure compliance with all applicable laws and regulations.
- Follow proper handling and right temperature of all food products.
- Assist as needed in the interviewing and hiring of employee team members with appropriate skills.
- Identify the developmental needs of kitchen staff and provide coaching, mentoring to improve their knowledge or skills.
Job Skills:
- Registered Apprenticeship certificate or equivalent experience
- 3 + years of related experience; ideally in a Resort environment
- Using high temperature grills/griddles
- Using convection/rational ovens
- Utilization of step-in coolers and freezers
- Working with high-quality knives
- Butchery of all sorts meats, fish, poultry, game and whole animal etc.
