Job Summary

Reporting to the Director of Operations, you will be accountable for the overall success of the daily kitchen operations. You will focus on exceeding guest expectations while simultaneously driving revenue and maximizing profit. As the leader of the culinary team, you will create an energized, inspired Kitchen that fosters teamwork. You will demonstrate creativity and individuality in your menu conceptions and be willing to try new culinary techniques.

RESPONSIBILITIES: (Including but not limited to)

• Managing the daily production, preparation and presentation of all food for the hotel’s restaurant, room service, concierge lounge and banquets while ensuring consistency in quality and taste.
• Creating and implementing new menus based on food trends, regional tastes & guest preferences.
• Providing support of a specialist nature to the Executive Committee, particularly to the Director of Operations.
• Supporting team goals and measuring effectiveness as it pertains to Food & Beverage profit and service performance feedback from our Guest Satisfaction Survey and Event Satisfaction Survey.
• Reviewing staffing levels to meet service, operational and financial objectives and working with Human Resources to interview and hire culinary associates
• Training, developing and motivating culinary associates to exceed guests’ expectations through goal setting and performance evaluations.
• Participating in the annual budget and marketing plan, taking initiative and being proactive in implementing new concepts and ideas.
• Managing budgeting, forecasting of all kitchen and labor expenses; setting margins and managing the business against projections.
• Adhering to health department and hotel sanitation and food handling guidelines
• Other duties as assigned by the Director of Operations.

QUALIFICATIONS:

• Must have a minimum of three of experience at the level of Executive Sous Chef or higher; it is preferred that candidates hold the CCC designation. Executive Chef level experience a definite asset.
• Must have Red Seal certification
• Food Handling and Sanitation Certifications required; First Aid & Basic CPR certification an asset.
• Requires good communication skills, both verbal and written
• Proven ability to prepare and manage a budget
• Extensive knowledge of menu development, insight into marketing, cost and wage control
• Thorough knowledge of food products, standard recipes and proper preparation and sanitation standards
• Ability to effectively deal with internal and external guests with a proven record in conflict resolution
• Must be computer literate with basic knowledge and understanding of Word and Excel
