The Sous Chef works in support of the Chef de Cuisine to provide a high standard of food production at all times. The Sous Chef supervises the kitchen staff in conjunction with the Chef de Cuisine, participating in the training and development of staff and providing input for performance appraisals and disciplinary action. He/she manages the kitchen in compliance with all health and safety regulations by ensuring adherence to sanitary and safe food handling guidelines at all times.
